Fresh apples spiced with cinnamon and nutmeg to make a delicious allergy friendly cake! Applesauce is the perfect egg substitute for this apple cake that adds moisture and flavor. I found my allergy free butterscotch chips on Amazon. If you can't find them, the cake will still be delicious!

Ingredients
- 2 cups sugar
- 1 cup oil
- 1/2 cup applesauce
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1 tsp salt
- 2 1/2 cups flour
- 3 cups peeled and chopped apples I used a mix of Granny Smith and Gala apples (mostly Granny Smith)
- 1/2 cup allergy friendly butterscotch chips

Instructions
- In a mixer, stir together first 3 ingredients.
- Stir in the remaining dry ingredients and apples. Batter will be stiff.
- Turn into a greased 9x13 inch pan.
- Sprinkle the top with butterscotch chips (optional).
- Bake at 350° for 35 minutes or until a toothpick comes out clean. Serve with allergy free ice cream or whipped topping and enjoy!
