Ingredients
- 2 lbs chicken breasts, chopped
- 3 bell peppers, chopped I used tri color peppers
- 1/2 red onion, chopped
- 1 cup cherry tomatoes, whole
- 12 oz broccoli florets
- 2 zucchinis, chopped
- 4 Tbsp olive oil
- 2 tsp italian seasoning
- 1/2 tsp paprika
- salt and pepper to taste

Instructions
- Preheat oven to 500°
- Chop all veggies into desirable bite size pieces. Chop all chicken into bite size pieces on a separate cutting board.
- Place all veggies and chicken together on two roasting pans to allow room for everything to evenly cook. Add olive oil, italian seasoning, paprika, salt and pepper. Toss to combine everything.
- Bake 15 minutes or until veggies and chicken are cooked. Enjoy over a bed of brown rice with a squeeze of fresh lemon juice!
